Here I am, three days into my NPC Bikini 10 week prep and I'm feeling GREAT!!!
I am currently eating 6 small meals a day and let me tell you it seems like a lot of food still. I'm having a little bit of trouble adjusting to eating more frequently and sometimes my work schedule makes it a little tricky but I'm figuring it out slowly but surly.
My new favorite thing is my breakfast creation! I am not a huge breakfast person at all and never have been, but this meal is slowly becoming one of my favorites! I want everyone to try it because its so good ;) Egg whites are a great source of lean protein with low fat content and low carbs, which in this phase of my prep is really important because were trying to lean out as much as possible without sacrificing the muscle mass. So lots of lean protein is a good thing! Of course most veggies are always a good thing no matter what. Right now I am on a real pepper kick, I'm loving sweet peppers and eating them more then once a day. Everyone knows that spinach and any leafy green veggie is the best thing for you. I wasn't a huge fan but I know its good for me and I forced myself to eat it in salads and I started liking it and now I eat it all the time with no questions asked. Now lets be real, what is a scramble without cheese? Luckily we still want a small amount of fat in our diet and in this meal we get most of it from a small amount of cheese! So here is the recipe, its super easy and it can be baked or cooked on the stovetop!
6 egg whites or 1 cup of liquid egg whites
1 whole egg
1/2 cup of mixed veggies (I used peppers and mushrooms)
1/2 cup of spinach
1/8 cup of 2% shredded cheddar cheese
Cook it up and enjoy! I of course have to have sriatcha on mine since I eat it on practically everything!!
